The origins : vegetables from field to plate
Behind the L’Asphodèle project are Grégoire Desnoulez, an organic market gardener for over 25 years, and Florent Piard, restaurateur and founder of the Résistants which today brings together three restaurants and a grocery store supplied directly by around a hundred French farms from peasant agriculture.
After working with several restaurateurs over the years, Grégoire Desnoulez became one of the first market gardeners to trust the Résistants project. From this relationship of trust came the desire to go further, to create a unique market-gardening testing ground where the distance between the kitchen and the fields no longer exists.
After more than two years of research, the call for projects launched by the Town of Ploemeur in 2022 brought the L’Asphodèle project to life: a market-gardening area in a coastal zone and a building to house a restaurant, complemented by one of the most ambitious natural-area restoration projects in France.
L’Asphodèle : a unique project to bring the Courégant moor back to life
L’Asphodèle is a project of a new kind, aiming to restore the natural ecosystem of the Courégant moor in the town of Ploemeur in the Morbihan, through an alternative model of natural-area management that is unique in France, built around an environmental action plan, organic farming and a dining space in a circular and symbiotic approach.
A protected, endemic species of the Breton coastal heath flora, the Asphodèle d’Arrondeau plant fully embodies this conservation challenge essential to the return of biodiversity. The restaurant, for its part, is the fundamental link uniting the three pillars of the project while also being its economic lifeblood.
